Fluffy Pumpkin Muffins with Toasted Coconut & Walnuts

Are you drooling yet?

I was. Imagine your house surrounded by the aroma of pumpkin, toasted coconuts and hints of walnuts. That's what this quick recipe will achieve and in a quick 30 minutes at that!

I saw this recipe on FoodGawker- my go-to recipe page. I think its the layout or the mouth watering food images,whatever it is the recipes bring it. 

This is one I had to share since it is Thanksgiving and we all need a little pumpkin something or other on our dinner table. I was bored with the pie making and I love trying new recipes that are a little different then what people expect to eat on the holidays and this one just blew me away!

The taste is incredible, the muffins are fluffy and moist. The coconuts stay soft in the inside of the muffin and the walnuts give it that little bit of a crunch. Besides smelling like something amazing and tasting just as equal, doesn't it look beautiful?

Make these! You wont be let down and its impossible to mess up. You can even substitute walnuts for pecans if you prefer, that's the best part about baking-just make it your own. 

*Side Note* The recipe calls for pastry flour, I used all-purpose and it turned out fine.
